Product Description Don't let the "spanish rice" you've had in the past fool you, paella, the national rice dish of spain is a different beast all together. Although paella refers to both the dish and the pan used to cook it, it really is the pan that makes the dish. The 15 inch polished steel paella pan from Myson is made of carbon steel for optimum heat distribution and retention, features double riveted handles and a traditional diveting on the base of the pan that reduces sticking. The pan is large in diameter and shallow so all of the ingredients cook in a uniformly. As the pan seasons over time, it will create a naturally non-stick surface. For an authentic evening, be sure to stock up on Bomba rice and smoked paprika. 15 Inch diameter fits on a single burner. Handwash. Pre-season before first use.

I am still in the process of seasoning this pan...yes it's a pan that needs seasoning...So if you are planning on cooking Paella in it the first day you get it, forget it. All good things come to those who wait...now I said process and that is what is unless you have a couple of hours to devote to it, I have been a little busy. As a side note I bought this one after someone gave me the 18" one for Christmas...a great gift...but with one problem the 18" ONE DOES NOT FIT IN MY OVEN (I finish my Paella on the bottom rack, it heats more uniform than the stove) the measurement is the bottom of the pan, and DOES NOT INCLUDE THE SIDES AND LIP OF THE PAN! The 17" would have fit in the oven but I decided to go a little smaller instead of just 1" that would give me two real different sizes since I kept the 18" to do Paella the real way, over a campfire.

we seasoned the pan per the instructions and have used it twice. Works as advertised. Easy to control the heat. Any larger and it would require more than one burner. We use one burner primarily, then put it over two at lower temperature until all the water is absorbed (rotating occasionally).

I wanted a large pan so I could cook paella for everyone. This pan is marvelous but huge. The measuremet is of the bottom of the pan not handle to handle, so be aware of that. It is of good weight and very sturdy. A worth while pan for folks who want to feed a decent amount of people.
